The evaporator coil absorbs heat.
But lets take a deeper look at the air side evaporator coil.
this video will be the air conditioning of evaporative coils for people is called comfort cooling, environmental cooling, and climate cooling. meaning the climate or environment inside a space for people.
Inside the refrigerant is boiling/evaporating/saturation/latentheat at a lower temperature than the air. changing state from a vapor to a liquid absorbing a lot of BTU of heat energy. it is absorbing the heat from the air (cooling the air). When all the liquid boils away the vapor is still cooler than the air, as it absorbs heat the vapor increases in sensible temperature superheating the refrigerant above its saturation point.

The air is sensibly cooled as the heat leaves the air and travels to the cooler refrigerant. More importantly the air is dehumidified. Meaning we need to pull moisture from the air. this is called latent cooling. the moisture from the air condenses changes state from a vapor to a liquid rejecting heat (to the refrigerant) the refrigerant must be below the due point temperature for this to happen. we must pull 970 BTU of heat energy just to make 1 mount of water change state from a vapor to a liquid. change of state without a change in temperature is latent so this is latent cooling.
It takes capacity of the system to dehumidify.
If we cool the air without removing moisture the humidity goes up! yes as we cool the air it squeeze's the air and the air can hold less moisture so the humidity level rises. CRAZY RIGHT! hang on, when we get to psychrometrics class we will discuss this and how it happens.
